Description:  Chopped parsley with onion, tomatoes, cracked wheat, and mint.

Ingredients:

  • 3 Large bunches of curly Parsley

  • 1/2 finely chopped Sweet Onion

  • 1-1/2 cups of chopped Tomatoes

  • 1 cup (unsoaked) Cracked Wheat

  • 2 Lemons

  • 3 tablespoons of Olive Oil

  • Chopped Mint

  • Salt, Pepper and Garlic

  • 1/2 teaspoon of Allspice

Special Cooking Items:

  • None

Preparation Instructions:
  • Chop parsley and add onions and tomatoes.

  • Soak cracked wheat until wheat doubles in bulk.

  • Mix cracked wheat with salad and add spices to desired taste.

  • Mix with lemon and oil.

  • Serve with pita bread. 

  • Serves approximately 8 people.
