Description:  Skewered lamb, mushrooms, and assorted vegetables flavored in soy sauce, Italian dressing, garlic and ginger.

Ingredients:

  • 1 pint of Cherry Tomatoes

  • 10 ounces of Mushrooms

  • 3 full Green Peppers

  • 1 Onion - green or regular

  • 2 medium size Zucchini or other vegetables of choice (Eggplant, etc...)

  • 1/4 cup Reduced sodium Soy Sauce

  • 1/4 cup Italian dressing

  • Crushed garlic, salt, and pepper to taste.

  • 1 teaspoon of Ginger.

Special Cooking Items:

  • Skewers

Preparation Instructions:
  • Cut up lamb into 1 to 1-1/2 inch chunks.

  • Cut vegetables into 1 to 2 inch chunks.

  • Mix reduced sodium soy sauce, fat free Italian dressing, salt, pepper, and Ginger.

  • Marinate lamb in mixture for 1 to 2 hours.

  • Pierce food with skewers. Alternate meat and vegetables.

  • Broil or barbeque for 10 minutes turning 2 or 3 times.
