Ingredients:

1 pint of Cherry
Tomatoes

10 ounces of
Mushrooms
-
3 full Green
Peppers
-
1 Onion - green
or regular
-
2 medium size
Zucchini or other vegetables of choice (Eggplant, etc...)

1/4 cup Reduced
sodium Soy Sauce
-
1/4 cup Italian
dressing
-
Crushed garlic,
salt, and pepper to taste.

1 teaspoon of
Ginger.

Instructions:

Cut up lamb into
1 to 1-1/2 inch chunks.

Cut vegetables
into 1 to 2 inch chunks.

Mix reduced
sodium soy sauce, fat free Italian dressing, salt, pepper,
and Ginger.

Marinate lamb in
mixture for 1 to 2 hours.
-
Pierce food with
skewers. Alternate meat and vegetables.
-
Broil or barbeque
for 10 minutes turning 2 or 3 times.
