Soak cracked
wheat in equivalent amount of water for 30 minutes.

Grind the fat
part (outer part) of the lamb leg coarse (approx 1/3 of leg)

Season the coarse
grind with 1 tsp Cinnamon and 1/2 tsp of Allspice

Grind the lean
part (inner part) of the lamb leg finer (remaining 2/3 of
leg)

Season the fine
grind with 1 tsp of Cinnamon

Season fat and
lean parts with

Brown coarse part
with onions and pine nuts.

Grind fine part
again with soaked cracked wheat. Mix well.

Grease 9" x 13"
pan with oil

Layer 1/2 of the
fine meat mixture on the bottom
-
Spread the entire
amount of coarse mixture in the middle

Top with the
remaining fine meat mixture

Dot the surface
with butter and make diagonal grooves in the surface with a
knife.

Bake at 350° for
45 minutes.

Cut on diagonal
slices and serve. Serves 8 to 10 people.
